Dolmades are wine leaves stuffed with rice.
Though dolmades have a long history in
Greece, the recipe itself is from the
Arab cuisine. The rolled leafs are filled with rice, dill and other herbs,
onion, parley, salt and pepper. The dolmades are then cooked in water and can be
served hot or cold.
Dolmades usually contain no meat, but if you
are a vegetarian it is better to ask, just to be sure. On other
Greek islands
and in Turkey dolmades can be prepared with mince meat instead of rice.
You can buy dolmades in tins and jars in
Greek supermarkets, but be warned that these taste terrible when compared to the
freshly prepared dolmades in tavernas, which taste delicious.
