Xifias souvlaki is a popular dish amongst tourists. Swordfish steaks are cubed
into bite-sized pieces then skewered on a stick to create a souvlaki. Typically
there will be other things interspersed between the fish. Depending on the chef,
you might find cherry tomatoes, lemon pieces, or pepper. There is usually a bay
leaf between each fish piece, which adds a delicious dimension to the souvlaki’s
taste.
The best xifias souvlaki are cooked over an open charcoal grill, and are usually
served with rice or chips. For many tourists, a plate of xifias souvlaki will be
one of the gastronomic highlights of their holiday in Crete. Highly recommended!
