Gemista rates as one of the most popular
vegetarian dishes in Crete. It is stuffed vegetables (usually tomatoes and red
peppers) usually served with chips. Less frequently you’ll find stuffed
courgettes, and from time to time with cheese stuffing (delicious). Green and
yellow peppers can also be used.
The most common filling for gemista is rice cooked with onions, salt, pepper,
dill, parsley and olive oil. The vegetables are then stuffed with this and
placed in an oven. It’s very rare to find a ‘meatarian’ gemista on Crete, but
it’s possible on the mainland – just ask the waiter.
