Imam Baldi is stuffed aubergines. Both aubergine and filling are fried for a
short time in a pan, after which the aubergine is stuffed then put into an over
for 45-60 minutes. Vegetarians should take care to ask if the dish is vegetarian
or with meat – both variations exist. Imam Baldi can be served cold as a
starter, or warm as a main dish.
The vegetarian filling consists of tomatoes, garlic, onions, herbs and flour.
It’s a cheap, nutritious and delicious meal that everyone will enjoy. As a main
course it is usually served with chips or rice. On the odd occasion the chef may
add a decorative leaf of lettuce to brighten up the plate.
